Gardening season is here!!!!





Growing up my family always had a garden with the essentials: tomatoes, cucumbers, zucchini, faggiolina, hot peppers (pepperoncino), squash, onions, chives,basil, parsley, strawberries and raspberries . Years ago my grandfather even built a greenhouse which housed a variety of fruits and vegetables which he looked after with such love and care. My grandfather is now deceased and the greenhouse is no longer there but I feel that keeping the tradition alive is important, so today I went to the market with my grandmother to select the plants we needed. She got the classics and I picked up a variety of herbs to plant in pots on my 2 x 4 balcony!!!

Healthy and Delicious!!! Oven baked Mahi Mahi

Oven Baked Mahi Mahi with Zucchini 
                                                                 

This recipe is healthy and satisfying 
Zucchini & Leek Side:
1/2 tbsp olive oil
3 zucchini
3 leeks
salt/ pepper to taste
In a heated skillet poor olive oil
Add leeks and a little salt and let sweat for 3 min
Add sliced zucchini and cook until tender (about 10 minutes)

Banana Bread and Chocolate Chip Hazelnut Cookies

I love baking for my loved ones, which is I decided to make a delicious Banana Bread and amazing Oatmeal Chocolate Chip Cookies with Hazelnuts.

Banana Bread with Walnuts and Chocolate Chips
Ingredients
1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
2 large eggs, at room temperature
1/2 teaspoon vanilla extract
1/2 cup unsalted butter, at room temperature, plus more for preparing the pan
1 cup sugar
3 very ripe bananas, peeled, and mashed with a fork (about 1 cup)
1/2 cup toasted walnut pieces
1/2 cup chocolate chips
